This is seriously one of my absolute FAVORITE toppings for steaks. Tarragon is an amazing companion to beef. A good compound butter can take any dish from good to GREAT. f you never have, you for sure need to try it right away! And the best part is that in the time it takes the meat to grill and rest, you can have this amazing butter ready and waiting.

You can also add a bit of minced garlic or shallots for some zing, and play around with the herbs. Garlic chives would be lovely too!

This recipe makes 2 servings if you’re like me and want every single last bite to be tarragon-butter infused, or 4 servings if you’re more conservative with your flavorings and want the taste of the meat to really shine through with just a hint of other flavors (and I can’t fault you for that either!).

Ingredients

  • 4 tablespoons (1/2 stick) unsalted butter softened
  • 3 chives finely chopped, (use 4-6 chives if yours are very short)
  • 1 sprig tarragon stem removed, leaves chopped
  • 1 tablespoon curly parsley chopped
  • 1/2 teaspoon kosher salt I used Morton’s
  • 1/2 lemon juiced

Instructions

  1. Combine all ingredients in a small bowl and stir until combined. Use right away or to save for later, place butter in a sheet of plastic wrap and form it into a log shape to slice and use later.
